Mezze Penne in bianco

Pasta in Bianco means pasta with a white sauce, or no red sauce. That’s what I cooked yesterday for my Momtv show which will air every Sunday at 700pm EST.

Many of you have asked so here’s the recipe:

First thing, you need good pasta. There’s a big difference between generic Wal-Mart pasta and Barilla pasta. I have no affiliation with Barilla but prefer it over most other brands. It’s more expensive but well worth it.

Let’s begin. Boil water in a medium to large pot (depending on how many people you’re feeding). Put one tablespoon of salt in the water. While the water is heating, get a small pan and put in two tablespoons of Extra Virgin Olive Oil. Peel one small onion and four pieces of garlic. Put them in the pan and start cooking on high.

Disclaimer: If you’re cooking for your first date this isn’t a good choice. Good food sometimes means bad breath, got it take the good with the bad and this is one of those cases.

Yesterday, I added four small tomatoes to the oil, garlic and onion, because my children like fresh tomatoes in the pasta. Cover the small pan and leave it on medium until a couple of minutes before the pasta is ready.

Once the water boils, and not a second before, put the entire box of pasta in – I cooked for seven people last night and I had a little bit left. Stir the pasta immediately, lest the little guys strike up a close friendship and become glued together. It can happen with pasta.

To make it al dente cook for a minute less than what it says in the box. I usually try the pasta to make sure it’s ready. Last night it took me 8 minutes to cook the Mezze Penne pasta and it came out al dente.

Turn off the Bianca sauce – oil, onion, garlic.

When the pasta is ready don’t wait any time to drain it. As soon as your teeth bite into the pasta and you can taste the slightly softer outer layer and harder inner core, pour it in the colander and ABSOLUTELY DON’T RUN COLD WATER ON IT! It will cook the pasta more and negate the Al Dente effect!

Pour the pasta in a large bowl with the oil, garlic and onions. I usually leave the onions in because my family likes them but many people take them off.

Now for the magic ingredient. Butter. Real fatty and delicious butter. Use a 1/4 of a real butter stick and put it in the pasta. Stir and add lots of Parmigiano Cheese. I put a ton in but you can start with a little and add more later.

Voila’ Pasta in Bianco!
